职责范围 Job Scope:

计划组织,控制和协调餐饮部所有员工;在控制成本到最低的同时,不断促进餐饮销售;确保高质量高标准的酒店餐饮服务;维护餐饮部各餐厅的运作正常,干净整洁。根据餐饮部的规则或豪生国际酒店的规则直接向总经理汇报。

Responsible for planning, directing, controlling and co-coordinating all activities of Food & Beverage personnel; for continuously improving food and beverage sales while keeping costs at a minimum; for ensuring that hotel standards of food and beverage preparation and service are maintained; for the operation, cleanliness and maintenance of food and beverage outlets. Responsible directly to the General Manager for compliance with established food and beverage policies and practices of hotel and Howard Johnson International.

1. 指导,控制,协调餐饮部各活动

Directs, controls, co-ordinates in all Food & Beverage activities such as:

? 食品和饮料的准备

Preparing food and beverage

? 酒店内和酒店外的各式宴会的食品和饮料服务

Serving food and beverage at hotel outlets and in functions within and outside the hotel

? 确保餐厅工作区域,工作台,各式器械和用具的清洁和良好

Cleaning and maintaining outlets, work areas, tableware, utensils and other materials and equipment used by Food & Beverage sections

2. 公正评价每位员工的表现和态度,指出不足和错误。确保餐饮部的标准能体现和维持。Appraises personnel’s performance and product; corrects mistakes and inadequacies, ensuring the hotel standards of food and beverage preparation and service are maintained.

3. 根据程序培训员工;主持会议讨论现存问题和将来的计划及新观点和错误的纠正,并给出指示。

Trains personnel according to established procedures; conducts meetings to discuss problems and future plans, presents new ideas, corrects mistakes and inadequacies, gives instructions and special assignments.


4. 协调餐饮部和各部门之间的关系,确保各项活动的顺利进行。

Co-ordinates the different sections of Food & Beverage and other department of the hotel, to ensure that preparation for all functions, festivals and other activities involving Food & Beverage have been made.

5. 与销售总监协作市场调研,完成的计划要实施。

Co-ordinates with Sales Director in the preparation of the Marketing Plan, sees to the implementation of approved plan.

6. 准备每月的餐饮报告, 分析销售数据,成本和盈利,和预报表的比较。

Prepares the Food & Beverage Monthly Report, detailing and explaining figures of sales, costs and profits and comparing same with forecasts.

7. 分析每月的财政状况和补救措施。

Reviews and analyzes monthly Financial Statements, charts prepared by his assistants, requisitions and purchase orders, and other performance indicators, takes necessary remedial action.

8. 确保高质量的食品饮料和低成本。

Ensures purchase of highest quality food and beverage supplies at lowest possible cost; co-ordinates with Accounting and other concerned departments of the hotel.

9. 和专人探讨,计划和策略如何增加销售,如新的菜单或特殊的活动。

Develops, in co-ordination with appropriate personnel, plans and strategies for selling food and beverage, such as new menus, special offers and promotional activities.

10. 确保仓库充足的备货,所有器械良好。

Ensures that adequate inventories of food, beverage and equipment are maintained.

11. 根据成本和竞价修正食品和饮料的价格。

Recommends revisions in pricing of food and beverage items based on costs, competitions etc.

12. 和酒店客户保持良好的关系。

Promotes and maintains good public relations with hotel clientele.

13. 参与重大的运作问题,如客人的投诉,要求;并做出回答。

Attends to major operational problems and needs brought to his attention by his staff; attends to guest complaints, inquiries and requests; answers correspondence.

14. 批准请求,申请单和每日申请等。

Approves requisitions, work orders, purchased order, market list, etc.


15. 去其它的酒店餐厅比较食品和饮料的服务质量;和厨房,成本控制,采购讨论重大的发现,物品是否需替代

Visits other hotel, restaurants and other competitors to gauge quality of food, beverage and service, visits markets and other sources to determine availability and quality of needed supplies; look for possible substitutes; informs Management, Kitchen, Cost control and Purchasing of important findings.


16. 为餐饮部餐厅拟定娱乐活动并相应雇佣员工。

Hires and schedules entertainment of Food & Beverage outlets.

17. 其他任务相应完成。

Performs duties common to all Managers and other duties as may be assigned.
